Campaign Middle East recently caught up with FIVE’s Director of Sustainability, David Shepley. The hotel brand has a reputation for parties, luxury living and indulgence, but also works hard on its green credentials.
What is FIVE doing to minimise food wastage?
We focus on eliminating food waste across various points along the value chain. Improving the procurement process by conducting data analysis helps FIVE’s chefs to order exactly what they need at the right intervals, reducing wastage up front and reducing costs.
Our compost machine allows us to tap into circularity where we can enrich our landscaping, for example. We are excited by an increasing range of technologies, which can convert waste to energy.
Do your guests really care about sustainability?
FIVE’s focus aims to create opportunities that raise customer awareness on how we deliver our ‘Sustainable Indulgence’ experience, where guests enjoy our iconic entertainment and luxury lifestyle offerings while also learning how sustainability interweaves across their stay.
Soon, guests will be able to scan their in-room glass water bottle to read the story of how we have eliminated 2.3 million PET bottles per year, across our FIVE Palm Jumeirah and FIVE Jumeirah Village hotels.
When considering our high energy entertainment ecosystem, 100 per cent of the hotel’s operations ran on renewable electricity in 2022, and will continue to do so.
FIVE has branched out with an airline. Can this be sustainable?
Fly FIVE has pursued a carbon offset approach by engaging the world’s first carbon credit transaction protocol, Carbon Offset Certification. Although open to Sustainable Aviation Fuel (SAF), Fly FIVE understands SAF’s limitations and the importance of communicating responsibly around its purported sustainability impacts.
